Team Kansas City decided upon a fun New Year's tradition for our recipe this time around! Kids will have a blast helping to assemble and fill these - or they'll be thrilled to "pop" them open to find a surprise inside!

Snap. Crackle. Poppers Rice Krispies® Treats

3 Tbsp. Unsalted Butter + extra butter for ?greasing?
4oz. marshmallows (1/2 bag) ? make sure bag is left open overnight
2 c. Traditional Rice Krispies®
Candy of choice to fill
Decorating Supplies (frosting, glitter, stickers ? pretty much anything you want to use to make it unique.)

Melt 3Tbsp. Butter in a heavy saucepan over med-high heat.

Add marshmallows, stirring constantly until melted and mixture is smooth.

Add RiceKrispies® to hot mixture in saucepan (this keeps them warm, and thus easier to manipulate, longer)

Mix thoroughly.

Butter plastic cutting board.

Place half of marshmallow mixture on cutting board and make into a small loaf. (Around 5? by 3?.) Try to compact the mixture as much as possible.

Once you have a compact loaf, take a small fondant rolling pin (or other small rolling pin) and roll out the mixture to a 1/4 inch thickness ? trying to keep the shape of a rectangle. (You will need to work quickly. The cooler the mixture gets, the more difficult it is to shape.)

Take rolling pin and ?roll? mixture into a cylinder with a 1 1/2? circumference.

Remove rolling pin and pinch one end to desired look. If going for a tapered end, start about 1 inch in, pinch and crimp the end.

Tilt and fill with candy of choice.

Pinch other end.

Set aside and let harden for 24 hours.

Repeat with other half of RiceKrispies® mixture.

Decorate once hard with fondant, icing, stickers, glitter, etc. The sky is the limit!

Note: You can make these ahead of time and freeze. Another idea is to put a small fortune, saying, or inspirational quote inside the crackers.

Swirly Peppermint Roll-Ups
yields: 1 large roll/6-8 Slices
3 Tbs Margarine or Butter
6 Cups Kelloggs Rice Krispies
4 Cups Mini Marshmallows
Cream Cheese Frosting 6 Regular Candy Canes Crushed Red Food Coloring (Optional)
Directions:

It's holiday time! And that means it's time for the last Rice Krispies® Making Memories Challenge of 2011, Winter Holidays. Team Asheville played around with several different ideas for our final entry, but when the dust from the Krispies settled, and the marshmallows were all melted and eaten, what we we were left with was a cold weather treat that would have even the Grinch sneaking back for seconds.

What better way to ring in the cold weather season than with a steaming cup of hot cocoa and a cute Peppermint Rice Krispies Snowball? There's just something about that cool, sweet punch of peppermint on the tip of your tongue that makes the frosty temps of winter a bit more welcome.

For our Rice Krisipies® Treat, we incorporated crushed up candy canes and white chocolate to the traditional treat recipe. A few sprinkles of holiday cheer, and a candy cane hanger completes the confection.

This treat can be made one of two ways. You can either melt the white chocolate chips along with the peppermint into the marshmallow mixture for a quick and simple sweet bite or leave them out and use a melted chocolate coating to harness your holiday sprinkle creativity. Or try using a fun shaped cookie cutter to inspire your own unique hanger shapes like our adorable snowman.

We hope these peppermint inspired treats will become a sweet addition to your winter holiday traditions! We sure had fun making them and sharing them with our kids.

Peppermint Rice Krispie® Treats Snowballs

Ingredients:

1/4 Cup Butter
1 10 Oz. Package Marshmallows
1/3 Cup Crushed Candy Canes
6 Cups Rice Krispies® Cereal
2 14 Oz. Bags White Candy Melts
2 Tbsp Vegetable Oil

Instructions:

Melt the butter in a large saucepan over medium low heat.

Add in the marshmallows and allow them to melt completely.

Add in the crushed candy canes.

Remove the pan from the heat and stir in the Rice Krispies®.

If making balls, pull out heaping tablespoons from the pan and roll into balls. Add a candy can into the center of each ball.

If making cut out shapes, press the Rice Krispies® mixture into a pan prepared with cooking spray.

Allow to cool for about five to ten minutes and then cut out your favorite shapes.

Add a candy cane into the top end of the treat.

Place your finished treats into the fridge for about 15 minutes to cool down.

Melt the candy melts according to package directions and add in the vegetable oil to thin the mixture.

Dip your cooled treats into the chocolate, sprinkle or decorate, and set aside to cool and harden completely.

Note: For a quicker version, simply substitute one 12 oz. bag of white chocolate chips for the melts and oil. Add the chips in with the marshmallows and heat until completely melted. Proceed with adding the candy canes and Rice Krispies®. You can then roll your balls and add sprinkles to the still warm treat.

Makes about 24 balls.
