
quatromama Cranberry Macadamia Rice Krispies On A Stick
The super creative women at The Motherhood asked me to team up with Rice Krispies to create a Rice Krispies Treats® creation. Our theme was “Back to School” and the recipe had to contain either a fruit or a nut. Each of the 10 selected bloggers worked together to form a sentence with our secret words over Twitter. We came up with “Make Your Rice Krispies Recipe An After School Conversation Starter".
As you know there’s LOTS of conversations going on in our home and after my recent baking trip, my wheels were turning with ideas. Here’s what you’ll need to recreate our Cranberry Macadamia Rice Krispies on a Stick creation.
3 tablespoons butter or margarine
4 cups miniature marshmallows
6 cups Rice Krispies®
1 package of white chocolate chips
1 cup of dried cranberries
1 cup of finely chopped Macadamia nuts
1 tablespoon of vegetable oil
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. In separate bowl mix cereal and dried cranberries.
3. Add Rice Krispies mixture to melted butter and marshmallows. Stir well. (Work those arm muscles!)
4. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. (I recommend trying this size, as my 8x8 pan proved to be too top heavy for the sticks.)
5. Insert cookie stick (I found these at my local craft store) and stick in the freezer to harden for 10-15 minutes. (You might try adding a little melted chocolate to the end of the stick to help it hold.)
6. Melt white chocolate chips and oil in double broiler.
7. Remove treats from freezer and dip top third into melted white chocolate. Coat with chopped macadamia nuts.
8. Allow to cool upright or by placing on a cookie sheet. (You might even want to throw them back in the freezer for a few minutes.) Or if you happen to find a school bus filled with apples, remove the apples and poke holes in the roof to display.
9. Step back and admire your awesome creation.
10. Strike up an after school conversation while snacking on these yummy fruity/nutty treats! Perhaps talking about what happened on the bus? Or how to keep from being too “nutty” during class?
They won’t be able to resist them…or YOU!

PB&J Rice Krispies Treats
3 Tblsp. Butter
10 oz. Marshmallows (40 Large)
1/3 Cup Creamy Peanut Butter
6 Cups Rice Krispies
2 Cups Frozen Mixed Berries
1/8 Cup Sugar
1 Tbslp. Corn Starch
In a saucepan melt butter over low heat. Add in marshmallows and heat slowly until they melt. Add in 1/3 cup peanut butter and stir until mixed with melted marshmallow mixture. Pour in Rice Krispies and mix well. Grease a 13″x9″ baking pan with cooking spray. Place Rice Krispies Treat mixture in greased pan and press firmly with waxed paper. You want a thin even layer of Rice Krispies Treats. Let cool.
For the “Jelly” portion I made a berry sauce. Defrost the frozen berries (or use fresh berries). Pour the sugar over the berries (I used just enough to take the tartness away). I blended the berries with a hand blender until smooth. Add in corn starch. Heat over medium low on the stove, stirring often. As the mixture heats it will thicken. Heat until the mixture is as thick as you like (I used the sauce to write so mine was pretty thick!).
To make the after school snack a conversation starter, I decided to use cookie cutters to cut out the Rice Krispie Treats. I then took the berry sauce and wrote corresponding words on the shapes. I left out one letter on each treat so that the kids would have to figure out what letter was missing. If you have older kids you can make the words more difficult. The shapes and words I used were: Ball, One, Bell, Dog, Bird and Tree. (I was limited on the cookie cutter shapes that had short corresponding words!)

Alicia My kids had such a blast helping me with the Rice Krispies Recipe Box Challenge!
Here is the recipe and instructions for my July 4th inspired 'Very Berry' Rice Krispies Treats:
1. Make Rice Krispies Treats as usual
- Melt 3 tablespoons butter in large pan on low heat
- Mix marshmallows in and stir constantly until completely melted
- Remove from heat
- Stir in 6 cups Rice Krispies
- SPECIAL – Separate Rice Krispies Treats mix into two 13×9 inch pans to make two thin layers
2. Refrigerate for 30 minutes to an hour – not necessary, but keeps the sorbet you are going to put on the soon to be cut out stars, from melting quickly
3. Once cool, cut Rice Krispies Treats into star shapes with a cookie cutter and put the individual stars on wax paper
4. Coat 1/2 of the cool Rice Krispies Treats stars with raspberry sorbet (substitute with your favorite flavor, ice cream, or frozen yogurt)
5. Place a star on top of the sorbet covered Rice Krispies Treats stars
6. Top with Cool Whip, strawberries, and blueberries
7. Transfer to a plate.. or your mouth
7. Garnish your plate with fresh fruit and enjoy immediately! ;)

Fruity Firecracker White Chocolate Rice Krispies Treat a la Mode
3 T. butter
1 10oz. bag marshmallows
6 c. Rice Krispies Cereal
1c. White chocolate morsels
1 Pint of Vanilla frozen yogurt
Sugar Free Cool Whip
Fresh blueberries
Fresh raspberries
One fresh strawberry
Chocolate sauce
Blue or red assorted sprinkles
Melt butter and marshmellows in a saucepan over medium to low heat. When thoroughly melted add in the white chocolate chips. Once white chocolate chips are melted stir in the Rice Krispies. Remove mixture from the saucepan and fill a greased pan or dish to create the base of the treat. The thickness of the treat depends on the depth of the dish that the treats are placed in.
Now grab a plate and drizzle chocolate syrup all around. Place a large Rice Krispies square treat in the middle of the plate. On top of the treat place a large scoop of vanilla frozen yogurt. Then scoop out a large dollop of cool whip to place on top of the frozen yogurt. Surround the frozen yogurt scoop with alternating fresh blueberries and raspberries. Top the dollop of cool whip with a large strawberry. Sprinkle blue and/or red sprinkles on the dessert. Garnish the plate with extra fresh berries and white chocolate chips. Enjoy!

kmb15 Here's my recipe! Coconut Lime Rice Krispies Coolers
3 T. unsalted butter
1 10oz. bag marshmallows
1 c. shredded coconut, sweetened
6 c. Rice Krispies Cereal
1 pint good-quality vanilla ice-cream
1 lime
2 c. heavy whipping cream
1/2 c. confectioners sugar
Makes approximately 20 coolers
1. In a saucepan over low heat melt the butter and the marshmallows together. Once they have completely melted, stir in the coconut until evenly incorporated. Stir in the Rice Krispies until they are evenly coated with the marshmallow/coconut mixture.
2. Remove mixture from the heat and press them into regular size muffin tins. You should have enough to fill approximately 20 muffin cups. To pack the Rice Krispie mixture into dip your fingers in cold water, keeping them damp will prevent the mixture from sticking to them.
3. Depress the center of each Rice Krispies treat to form a bowl in the middle. Make sure it is big enough to hold a standard size golfball. Then, place muffin tins in the refrigerator to chill completely.
4. Meanwhile, whip together the cream, zest of whole lime and juice of half a lime, and sugar to make lime whipped cream. Set aside.
5. To assemble the cooler, remove chilled Rice Krispie bowls and set them on a tray. Place one small scoop of vanilla ice-cream into each bowl. Top with a dollop of lime whipped cream, garnish with a slice of lime and serve.

Candy Bar Ice Cream Pie
Make a ice cream pie using your favorite candy bar. If you happen to love peanut butter cups, or another peanut butter candy, use peanut butter in the crust. For other types of candy, do a straight chocolate crust.
Crust:
6 oz chocolate chips
1/3 cup smooth peanut butter OR 2 tbsp unsalted butter
1 1/2 cups mini marshmallows
3 cups Rice Krispies cereal
Filling:
4 cups vanilla ice cream, softened
1 cup for your favorite candy bar or candy, chopped
1. Make crust: In large saucepan, melt chocolate morsels and peanut butter (or butter) over low heat; stirring constantly. Add marshmallows and stir until melted. Remove from heat. Stir in Rice Krispies cereal, mixing thoroughly. Press into a pie plate(that has been sprayed with cooking spray), making a thin crust on the bottom and the sides. You may not use all of the mixture, depending on the size of your pan. Let cool.
2. Make filling: Reserve 1/4 cup candy bar. In a medium bowl, mix softened ice cream and candy bar with a spatula. Pour into cooled crust, smoothing top. Sprinkle reserved candy bar on top of pie, then place in freezer until firm, at least 3 hours.
