  • More fun with tilapia

    I was cooking at my in-laws’ over break and made baked breaded tilapia: Dip the fish fillets first in mayonnaise seasoned with a few tablespoons of Caesar or Italian dressing. Then dredge them in a mixture of seasoned Italian breadcrumbs (I added more seasonings) and Parmesan cheese. Sprinkle with paprika. Bake for 15 minutes at 350, then broil for five minutes to brown the tops. Excellent.
