Crock-Pot Potato Soup

I saw Becki’s soup idea, so I thought I’d add my own as well. This soup is so good, I didn’t even like potato soup before I made this one. Now it’s a cold weather staple!
Ingredients:
5 lbs potatoes, peeled and coursely chopped
1 sm onion, chopped
8 oz cream cheese, softened and cubed
3 (14.5 oz) cans reduced sodium chicken broth
1 can cream of chicken soup
1/4 tsp pepper
Directions
Put all ingredients in Crock-Pot and stir. Cover and cook on low for 8-10 hours or on high for 4-5 hours. Stir occasionally. After cooking time, mash potatoes to thicken soup, if desired. Garnish with sour cream, bacon, cheese, or scallions to add a special touch!

I love anything I can make in a crock pot. This sounds delicious! I wonder if I can get the cream-of-chicken soup as reduced sodium. I am SO tired of being on a low sodium diet….

I’m not sure, but every where I look there’s a new reduced-sodium soup out there!
