  • Super easy pork roast...

    I bought a package of little pork roasts at Costco-I think they were called sirloin, but not sure. They weren’t tenderloins, in any case-about the size and shape of a Nerf football. I marinated one in soy sauce, ground ginger from a jar, and minced garlic from a jar from morning until afternoon, then baked it for an hour, maybe 70minutes at 350. Everybody actually loved it, including Little Miss Picky.

    That sounds fantastic!!! I’m all over it!!! I love the combination of soy, ginger and easy!!!!

    It sounds yummy, but boo hoo we can’t have it here. Oh well. I never really cooked with soy sauce that much before so it’s not that hard to skip the soy sauce.
    I tend to do all my roasts the same though – throw in crock pot, add a bit of broth, carrots, potatoes, parsnips if I’m feeling extra good and cook. Thankfully the family doesn’t complain that it’s always the same LOL!

    If it aint broke, don’t fix it. Another pork favorite of mine is a rub with garlic, rosemary and olive oil, but the kids are less thrilled about the rosemary.
    A nice thing about the ginger-garlic pork roast is that if you make up a big batch of rice as a side dish, you can cube the leftover pork and use the leftover pork to make pork fried rice the next day. Another dish that uses soy sauce, sorry, Brandie :(.
