About Me
  • You don't have to give up being a foodie just because you are a parent or have limited time in the kitchen. When my daughter was born in 2007 one of the first lessons I learned about parenthood is that the best (or only) time to cook and bake is during the child's precious afternoon naptime. Join me as I share my triumphs and challenges in the kitchen, provide practical solutions for family cooking without compromising taste, and fit it all in to a two hour window each day!

Do any of take your kids shopping to the farmer's market, grocery store or wherever you shop? It can be a great way to get kids curious about food and maybe give them a choice of healthy snacks. My daughter and I start with the produce aisle always and I let her pick out a fruit to eat while we shop!

One of the things I love to do is make one meal work for everyone. I usually take one or two elements of a meal and adjust them for the adults and children. For example, we all love pesto (daughter included). So for her I do cheese tortellini with pesto and for us I do salmon with pesto. I hope someday she'll be curious about the salmon part since it includes on of her favorite condiments. Recently, this winter, we made pesto chicken soup and she loved it. It was the first soup she really liked! Starting off with a common ingredient and branch out from there is a great way to introduce new food.http://www.thenaptimechef.com/2010/12/quick-pesto-chicken-soup-for-a-christmas-cold-webisode-53/

kmb15 posted on Forum Discussion We Heart Tomatoes!

ConAgra recently presented some impressive research results at the American Dietetic Association's Food and Nutrition Conference and Expo, suggesting that the nutrients in tomatoes may have a measurable impact on heart disease prevention. Using Hunt’s tomatoes is a great way to get a significant source of fiber, Vitamin C and the antioxidant lycopene into your diet. In fact, according to a study reported in the American Journal of Clinical Nutrition, lycopene absorption is two to three times greater in canned tomato products than raw tomatoes. Also, Hunt’s tomatoes are flash-steamed to help them keep their backyard-garden-fresh taste, are 100% natural and contain no artificial preservatives or ingredients.
