  • YvonneMoss Easy Peanut Butter Pie
    I haven't made this in years. The other day, my son Jeff had a craving for it so he made it himself. He knew I'd want to blog about it so he took this picture. It looks like he labored over it but it's not really that much work. It's great for a large crowd. It's rich so a small slice is enough.

    Combine 1 cup graham cracker crumbs buy them ground to save time in the baking section)
    1/4 cup firmly packed brown sugar and 1/4 cup melted butter. Press into the bottem and up the sides halfway of a 9 inch springform pan.

    Beat well...
    2 cups peanut butter
    2 cups sugar
    2 8 oz packages softened cream cheese
    2 Tablespoons melted butter
    2 teaspoons vanilla
    This should be smooth and creamy.

    In a separate bowl, beat 1 1/2 cup whipping cream to soft peaks. Fold into peanut butter mixture.

    Spoon into crust and refrigerate to firm. Around 6 to 8 hours.

    Then, in a *double boiler melt .....
    4 ounces of semisweet chocolate
    3 Tablespoons plus 2 teaspoons hot coffee ( use leftover and just warm)
    Once it's smooth, spread this on top of the filling and chill again.

    This is best made the day before you need it. Or do step 1 after dinner and then in the morning, finish it before you start your day.

    *If you don't have a double boiler, make one like this.....(I grabbed this pic off of google images to show you).







    And finally, here is what was left after everyone had a piece and then Jeff took some to work...
