    PB&J Rice Krispies Treats

    3 Tblsp. Butter
    10 oz. Marshmallows (40 Large)
    1/3 Cup Creamy Peanut Butter
    6 Cups Rice Krispies

    2 Cups Frozen Mixed Berries
    1/8 Cup Sugar
    1 Tbslp. Corn Starch

    In a saucepan melt butter over low heat. Add in marshmallows and heat slowly until they melt. Add in 1/3 cup peanut butter and stir until mixed with melted marshmallow mixture. Pour in Rice Krispies and mix well. Grease a 13″x9″ baking pan with cooking spray. Place Rice Krispies Treat mixture in greased pan and press firmly with waxed paper. You want a thin even layer of Rice Krispies Treats. Let cool.

    For the “Jelly” portion I made a berry sauce. Defrost the frozen berries (or use fresh berries). Pour the sugar over the berries (I used just enough to take the tartness away). I blended the berries with a hand blender until smooth. Add in corn starch. Heat over medium low on the stove, stirring often. As the mixture heats it will thicken. Heat until the mixture is as thick as you like (I used the sauce to write so mine was pretty thick!).

    To make the after school snack a conversation starter, I decided to use cookie cutters to cut out the Rice Krispie Treats. I then took the berry sauce and wrote corresponding words on the shapes. I left out one letter on each treat so that the kids would have to figure out what letter was missing. If you have older kids you can make the words more difficult. The shapes and words I used were: Ball, One, Bell, Dog, Bird and Tree. (I was limited on the cookie cutter shapes that had short corresponding words!)
