  • Brandie Peaches are done!
    Phew - it was only about 4.5 hours of work (although I still have a little clean-up and labeling to do) but wow - it felt like a lot longer ROFL! My 10yo helped peel all the peaches which shaved off a ton of time for sure!

    (Note to self: research easier way to get skins off peaches for next year)

    All in all we did pretty well. We started with about 25 pounds of peaches. We ended up with :
    5 quarts peach pie filling
    4 pints peach preserves
    8 1/2 pints peach preserves
    7 quarts peach halves

    We had 3 peach halves left over which the kids ate!

    I am bummed we didn't have enough to make peach-applesauce with. And I'll be curious to see how the halves taste in a few months. I'm not sure I'll make them next year. They didn't fit in the jars well and they sure don't look as pretty as the ones from teh store LOL! Maybe I'll do peach slices next year? Or do peach-applesauce with them instead. Or I'll do it all and just get way more peaches! ;-)

    • Deborah I'm still scared of canning. Though, my grandparents would par-boil, maybe just for a minute the fruit and the peels would seem to slide right off. I think, they did this with peaches--if my memory serves ( which it often doesn't;))

    • Brandie I think you're right Deborah - you can do something similar with tomatoes - I was going to try it, but none of the directions said to do it that way and I wasn't sure if doing that first would screw with cooking times later? I'll have to look into it more before next year that's for sure!

    • Brandie Also, canning isn't scary - but it is (at least to me) several intense hours of work - which go by much nicer if you have a friend/helper with you.
      We've never had anything go bad - from what I've read, it's pretty easy to tell when something goes bad - the lid will pop up or you'll know when you open it. Although, I will admit, I'm so thankful that canning is not something I *have* to do if I want my family to get through the winter and if something did go bad, I could easily replace it at the grocery store!

    • gottalovemom it's great bonding for you and your daughter..i bet she'll be beaming with pride when you serve the homemade goodies...sounds yummy and fun (maybe not the cleaning part)
