My uncle is a chef specializing in Northern Italian cuisine and I called him frantic when I was 18 because I didn't know how to make rice. He wasn't home but his wife was nice enough to explain. Now that's good advice considering how many different dishes can have rice as a side!

I'll go to steak. Good cut of meat, with a good amount of fat marbling. It melts into the meat and makes it tender. Just put a nice coating of sea or kosher (holla Melissa) salt on both sides. Sear it in a pan until there's a little crust. It seals in the natural juices. Then, broil until cooked to your liking. Hopefully medium at most...don't kill the meat! When it's out, spray with butter and let it REST for 5-7 minutes. The juices need to spread around. Works every time.

My mom always told me to make ENOUGH food - her mom would make one small casserole for a family of five. My dad, brother, husband - men in general, really - eat a lot more than I do, and I sometimes forget that!

Never over-handle pie crust. Asparagus kept standing up in a small dish of water keeps it fresh. Bread softens hardened brown sugar. Always peel back a bit of the corn husk to check the corn itself before purchasing. Sometimes it isn't as fresh as it looks!

Vera, I never really measure either but it doesn't always work out for me as I think I definitely don't have a good eye for measuring w/o the spoon/cup. Zareen - you are good at that! I should probably measure more

Add water to my meatloaf every 15 mins (just a bit on top) while cooking it - per my Mom. It has made all the difference and now I can make a stellar meatloaf. Finally!

Oh I LOVE this question. It makes me think of my grandmother. She did not give advice but I saw how much joy she got from being in the kitchen, her famous vegetable soup and how much she loved family dinners. That has stuck.

My girlfriend taught me how great using sea salt (over regular salt) can be for seasoning certain meats. Mmm, it makes such a difference!

Don't be afraid to put your own twist on a "signature" dish! EX: I turned my Grandmother's Blueberry Muffins into citrus blueberry with lemon and orange zest, and a light glaze. Not the tradition, but my interpretation.

My cousin, who is an organic farmer, taught me to make raw salads with kale. Her secret is to rub the kale leaves with salt and then let them sit for 20 minutes or so. Then you rinse, mix and dress ... and it's amazing.
