      We have dessert almost every single night! But sometimes it's fruit, applesauce, etc .. not always cookies, cake, etc. But when we don't have it. Whoa nelly! Lots of complaints. I always had dessert growing up too. I have fond memories of eating ice cream with my grandma =)

      I agree. If my son notices I'm eating dessert, I may give him a cookie or ice cream here & there, but I definitely try to limit it. He loves fruit, which is great. If you can get your kids to eat fruit early on, and maybe cut it into cool shapes, everyone will win.

      Oh yes, Monet, it totally is! We used to take a WHOLE DAY and make cookies for Christmas. Now we make them for ALL holidays and we've gotten a little creative with the icing colors! It's so fun as a kid cause you get to lick the icing you "accidentally" get on your fingers :)

      As for the enhancing the vanilla flavor, always add a bit more to your vanilla cake recipe. The standard is usually 1 teaspoon or so. I always add at least 2 and sometime 3 teaspoons. You can also use vanilla powder or scrape a vanilla bean into your batter. ALSO, try incorporating the vanilla into the batter when creaming the butter and sugar. The molecules will disperse better and enhance the flavor and perfume.

      Thankfully the teachers are aware so it makes it easy to just ask who is allergic to what. We have a peanut allergy in class right now so I just don't make anything that might have traces of nuts just to be on the safe side. I just look for recipes that don't have those ingredients and I experiment with recipes by modifying them to fit dietary needs.

    • Easiest cupcake recipe ever: mix a can of pumpkin with a box of Devil's food cake mix, put into muffin cups and bake according to the box directions. Healthy and easy! I add chocolate chips to mine and call them muffins, but you could easily frost them to create cupcakes.

      Yes, I agree. Most quick breads, gingerbread cakes, and such are fine without a stand mixer, because the batters are quick, often pretty loose, and don't require a lot of air beaten into eggs and butter.

      I have a stand mixer, and I almost never use it. Although I have a smaller by hand one and I use that. It's easier to get out, I can use any bowl I want with it, plus the kids LOVE to do that part.

      You can also use fruit butters to add flavor, sweetness, and texture. Try apple butter, prune butter, and the like, especially in chocolate or spice cakes where the darker color won't be an issue.

      I substitute most of the butter for Greek yogurt in chocolate cupcakes and muffins. It's great for oil substitute too...and applesauce works very well but I dfind that Greek yo keeps the goodie soft applesauce tends to make it tougher. Perhaps I'm doing something wrong with the applesauce?

      we do the rainbow cake twice a year to celebrate the end of the school year, and the beginning. last year, we added rainbow cupcakes to the mix. the key for colors that pop is to use the gel food coloring.

      It's a cake - very thin layers. My mother used to dip the bottom of a cake pan in the batter and bake each layer separately. Think chocolate buttercream icing spread between each layer (not too much!) and hard caramel on top. Out of this world.

      Maybe if there is a job you can give each of them and set them up in a little assembly line? It may get hectic but then everyone can have a clean-up task too!

      yeah, i need to learn to relax. it might be easier with one kid. but i have three! but really - only one that can really help... and the other just sort of gets in the way. One is 5 the other is 2.

      Yes, go ahead and pull all of your materials out and put them on a cookie sheet. Cover it with a cloth and then surprise them with getting to help you. Pick a few recipes that are hands on, like rolling the dough or adding the ingredients into the bowl, helping you measure, etc.

      I let my son mix cookie batter, or just give him a bowl and a spoon to play with. Banana bread would also be an easy option, as would decorating cookies, because then they can't mess up.

      I have the same trouble - the only thing I can suggest is to remember that it's just time you're spending together. Even if it doesn't turn out perfectly, it was still a fun process. Easier said than done, but definitely trure!

      I started out with easy things like that with my daughter. Then I just had to set aside those times with her as "learning and making memories" time. It's messy and imperfect but once I relaxed it was such a blast.

    • well. here is my question. i cook as an outlet - like it's my "me time" and i want to include the kiddos but I get kind of impatient with them. So I need really easy goodies to bake with them. So far I've done just boxed mixes where you just add water. Or i let them roll up the cookie balls if we do cookies. but other than that - i don't really know how to include them without my "just want everything to turn out right - right now" attitude to get in the way. any suggestions?
