      More great dip ideas that I was just reminded of are: Philadelphia cream cheese mixed with any pestos, sun-dried tomatoes, honey, or even chipotle is delicious and easy too.

      Dips work wonders. Kids love to dip stuff. I've made several of my own because each kid is different and likes different things. This site has some good recipes that I have used: http://www.healthy-kids-snacks.com/category/vegetable-dip-recipes. Getting the kids to help prep the veggies helps too. Another thing is to use that vegetable peeler to actually make the vegetables thinner. Kids prefer that. I use it for carrots. celery, cucumber, and lots of other stuff. Just make them pretty swirls, let them dip and it is a score!

      We do monkeys swinging in a tree and then they eat the tree (broccoli). Sounds hokey but all three of my children LOVE broccoli because of this.

      The only vegetable PN likes is corn on the cob - so I have to hide veggies in things. She still things the spinach and cheese pizza is basil and cheese... ;)

      He doesn't like anything mixed in (like spinach). He doesn't like crunchy veggies so dip isn't an option. I think if I cooked it and snuck it into something else, it might work.

      I chop up baby spinach and put it in almost everything. It doesn't have a strong taste and it shrinks up pretty small. :p

      Po-boys are great for hot summer nights. I also prep as much food ahead of time as i can so that I don't have to stand over a stove. I posted this a few years ago but I have a revised one scheduled for a couple of weeks from now: http://www.amybayliss.com/2007/04/saving-time-money-in-kitchen/. It gives you the basic idea of what to do. I also freeze all leftovers in individual containers and label them so that we have our own TV dinners! This is a win win because they get to pick exactly what they want to eat and I don't have to cook. Hubby also always has meals for lunch.

      I take frozen bread or the tubes of refrigerated bread...thaw them, roll them out and sometimes fill them with pizza fillings, veggies, or even cold meats and cheeses - roll them up and let them bake for about 30 minutes. It makes a great meal to eat on a picnic, etc.

      I do cereal , grilled cheese, pankcakes, nuggetts, etc.. my kids prefer simple and my hubby works at night so I don't over do... big meals are weekends when he is home and maybe once with them

      Chrissy, I use the slow cooker and stove-top as much as possible! A good grill pan works wonders. Also, bake as much as you can on cooler days or nights and freeze - then you can just reheat or thaw later!
