      Love the mini pizza idea - you could do them on whole grain english muffins too! Also a great way to sneak in a little bit of veggies (finely chopped mushrooms or green peppers perhaps?)!

      I use little pepperonis, some sauce, and melted cheese. If you keep it in the fridge overnight then by the time they get to school and have lunch it is room temperature. It is a great lunch. My kids have never complained and they are picky eaters.

      I'm going to have to take notes! LOL He doesn't do PB&J and hates rice. Pizza would be a good idea. If you do a quesadilla, do you melt the cheese b4 they go to school? sounds like it might be too cold. Wish there were microwaves at school.

      Oh yes! I love to use tortillas to make mini pizzas! It totally helps with my pizza craving and you can't feel bad about it! Not to mention it gives them a chance to create their own pizza with whatever toppings they want! And it could be a quick after-school snack!
