TM Book Club: New Stacie Billis Cookbook, Make It Easy

It should come as no surprise that The Motherhood team loves to cook, eat, and talk about what’s coming out of our kitchens! Over the past couple years, we’ve shared recipes that we turn to when bringing together family and friends, as well as those that inspire us to eat well, and we’re always looking for fresh ideas to put something new on the table.

So when our friend Stacie over at One Hungry Mama reached out to share the great news that she had compiled all of her tried-and-true recipes into one book, Make It Easy, our team was excited to dig in (quite literally)! With 120 mix-and-match recipes, Make It Easy truly takes the guesswork out of the whole process, from food prep to presentation. Using everything from smart, store-bought shortcuts to cook-from-scratch dishes, the book delivers recipes that will leave your family impressed without leaving you stressed.

One-Bowl Lemon Ricotta Pound Cake

The key term here is “one-bowl,” followed closely by “ricotta” and “cake.”

This recipe has a high ratio of convenience to deliciousness, which makes it a winner in our book. As billed, all of the ingredients can be combined in a single bowl, which makes for quick assembly and easy cleanup. The cake itself, baked in a loaf pan, is dense, fine-crumbed and flavored with just the right amount of lemon. It’s perfect for a lighter dessert (served with fruit and whipped cream), an indulgent snack (spread with ricotta and honey), or even a quick breakfast, after being warmed in the toaster oven or microwave.

Buttered Pasta with Ricotta and Peas

Using the leftover ricotta cheese you’ll have in your fridge after making the above pound cake, you can whip up this simple, tasty dinner.

The best part about this pasta dish (aside from the ricotta) is that the recipe is fairly basic and can accommodate a variety of ingredients. Your kids don’t like peas? No problem, just throw in whatever you have on hand, such as cubed chicken, ground sausage, corn, bell pepper or other meats and veggies they prefer. And for picky eaters, plain buttered noodles with cheese is always a winner.

Corn, Green Chili and Cheddar Strata

Make-ahead recipes are a blessing when you have a large group of people to feed or a potluck event to squeeze into your schedule – and with a full loaf of French bread and nine eggs incorporated in the recipe, this strata makes plenty for everyone.

You can (and should) assemble the dish the night before baking it, so the prep work is already done. All you have to do is pop it in the oven and serve with a side of sliced avocado, fruit, toast or bacon. It’s savory but not spicy, and it’s substantial enough to offer as a main breakfast or dinner option. The recipe is also quite versatile – you can swap or add any number of ingredients based on personal preference.

Parmesan Roasted Broccoli

The most unique thing about this cookbook is that it’s truly a resource versus a standard cookbook. Sure, it’s filled with recipes, but it’s not made of up of just dinner entrees or dessert dishes, but rather, practical, smart and useful kitchen hacks and tricks to truly make things simple and delicious.

While it seems too simple to be an entry in any cookbook, Parmesan Roasted Broccoli was one of the first recipes we dog-eared. Oftentimes it’s the side dishes that leave us in a rut, turning to the same steaming/boiling/raw routine with our veggies. It’s amazing how you can elevate your veggie dish by roasting and dressing it with the right ingredients. This one uses a little lemon, Parmesan, olive oil and seasoning; it will be a staple on the dinner menu.

Avocado Miso Dressing

This sauce is the answer to the too-ripe avocados sitting on your counter, as well as the too-boring-to-eat salad you brought for lunch and nearly any other dish that needs a little extra flavor. This dressing is truly out of this world.

The ingredients seem simple enough, and you might think you can anticipate what it will taste like. We promise it’s better than anything you’re imagining up as you skim through the list of ingredients. Stacie suggests this as a go-to for salads or seafood, so we topped lightly seared scallops with the bright green dressing for a really light, fresh-tasting dinner.

Roasted Cherry Tomatoes

Again, this may seem like a too-obvious idea to be included in a cookbook; however, that’s what this book is all about. Stacie encourages you to hone in on really smart food preparation ideas in order to elevate your dishes.

Tossed in a little olive oil and salt, and roasted to perfection, these tomatoes are the perfect addition to made-from-scratch hummus (which she also has a recipe for!), as well as a simple base for tomato sauce to serve over pasta.

Almond Milk

Another unique aspect of this book is that it offers options for made-from-scratch, as well as store-bought, ingredients. Stacie offers context around why you might choose store-bought for some things, while made-from-scratch is the way to go for others.

While there are likely numerous, delicious almond milk options at your local grocer, if you’re a fan of nut milk, it would serve you well to try making it yourself! Incredibly simple, it’s admittedly satisfying to see it progress from almond to milk. Made-from-scratch almond milk is a “yes!” in our book.

Overall Thoughts on the Cookbook

We sincerely loved exploring this cookbook as a team, although calling it a cookbook seems to undercut all that it offers. Make It Easy is really the Swiss Army Knife of cookbooks; it’s a true resource for the kitchen and offers far more than recipes. Although we loved the several recipes we tried, we appreciate the book even more for the tips and tools it offers the everyday cook.

National Nutrition Month: Recipes to Inspire Healthy Eating

March is National Nutrition Month

The Motherhood team has bonded over many similar interests and shared loves, but we’d all quickly point to food as one of our most popular water cooler topics! Whether it’s exchanging recipes, testing out new ones and sharing with each other, or just talking about our new favorite food blogs and ingredients, this team loves a good meal!

To celebrate National Nutrition Month in March, we decided to host a recipe exchange among our team and also share those recipes with all of you! Check out the drinks, easy weeknight meals and snacks that we’ve been enjoying this month.

The Motherhood Team’s Favorite Recipes this Spring 

As we head into spring, one of Brittney’s go-to breakfast options is Kristy’s Berry Spinach Smoothie from Mommy Hates Cooking. Brittney said, “I love a quick breakfast that’s filling, but not too heavy. We don’t always have time for a sitdown breakfast, so I love an easy, grab-and-go option for me and the rest of my family!”

From breakfast to lunch, Kayla has been loving the ease of Angie of Eclectic Recipes’ Black Bean Mango Quinoa Salad for lunch. “I’ve been in search of easy, quick and healthy options and this recipe meets all of those for me! So simple, and it tastes so fresh.”

Looking for lunch options outside of the standard chicken salad, one of Brittnee’s latest favorites, Raspberry and Scallop Salad, is also from Angie of Eclectic Recipes. “I love a great salad, but sometimes I want something different and a bit lighter. I love scallops, so when I found this recipe I knew I would love it!” Brittnee said.

Switching gears from lunch to dinner, Erin recently shared her love for stir fry with the team, passing along her go-to recipe for Healthy Beef Stir Fry in 20 Minutes from Allison at Some the Wiser. “I love a good homemade meal, but I don’t love spending a ton of time in the kitchen on a weeknight. Twenty minutes is totally doable, and any type of stir fry is always a hit at my house!”

Finally, a recipe round-up – even one that’s health-inspired – wouldn’t be complete without a few snack recipes. Both Nicole and Kahlianne are gluten-free, so they’re always looking for options that suit their dietary needs without sacrificing great flavor.

Nicole also seeks out dairy-free options, and since finding Kristy’s recipe for Black Bean Hummus on Mommy Hates Cooking, she has been hooked. “I love smaller meals and snacks throughout the day, and black bean hummus is a great one for that mid-afternoon snack that we all crave. It works for my dietary needs and it’s so delicious!” said Nicole.

Kahlianne has also found a gluten-free option that’s perfect for snacking — Allison’s Healthy 7-Layer Greek Dip, found on Some the Wiser. “This is a great snack and even a nice option as an appetizer for get-togethers. Although, I think it works well for a healthy lunch, too!” she told us.

Why It’s Important to Know Search Trends for Thanksgiving

Marketers, especially food brand marketers, should take note that the holiday responsible for the highest number of recipe searches is upon us: Thanksgiving! The Motherhood team was interested in exploring search trends for Thanksgiving and made a number of delicious discoveries.

Perhaps unsurprisingly for a holiday focused on food, Thanksgiving generates the highest number of online recipe searches compared to every other holiday. But knowing exactly when holiday searches spike can be beneficial for putting your brand in front of users most interested in your content at the most opportune time. For example, in this case, the data reveals a certain amount of procrastination when it comes to meal prep — searches for Thanksgiving recipes peak on Thanksgiving Day! But few advertisers implement marketing tactics for the actual day of the holiday, when doing so could potentially lead to significantly increased visibility and last-minute ingredient purchases.

Suggested Strategy #1: Solicit Evergreen Branded Content

When it comes to holidays like Thanksgiving, evergreen content is key. Creating branded content focused on holiday events will live on in search and social platforms.

According to Google Trends, searches relating to “Thanksgiving side recipes” increase by 400 percent in the month of November, and searches related to Thanksgiving desserts, recipes and easy recipes increase by 250 percent. Unless users filter searches to include specific dates, then branded blog posts, reviews and recipes from previous years will appear in current searches. That is a huge opportunity for brands to be seen again and again, year after year.

 

Suggested Strategy #2: Use Targeted Tactics

Using the available data and knowing where and when to focus your marketing tactics will help you leverage search trends for Thanksgiving to make your campaigns successful.

Curious what consumers are looking for in different areas of the country? Google has segmented the most popular Thanksgiving preparations by U.S. regions, based on search volume. Brining the turkey is most popular of searches, especially in the Northeast. For the South, it’s frying, and for the Midwest, smoking the turkey methods are most searched.

In the dessert category, it’s no surprise that pumpkin pie holds the title of top searched pie recipe across the country. And the day after Thanksgiving, searches related to desserts and what to do with leftovers spike. In fact, searches for “leftover recipes” hits an all time high three days after Thanksgiving each year!

Social platforms require targeted approaches, as well. For example, Pinterest reported that Thanksgiving pin trends for 2017 include painted pumpkin centerpiece decor and specialty diet (paleo, gluten free, dairy free, etc.) friendly takes on classic Thanksgiving dishes — both trends that brands could piggyback on at the right time for high exposure.

A Look at the Facebook Data

During the weekend before Thanksgiving, The Motherhood tracked the increased Facebook conversation around planning for the holiday, and we found some insights through anonymous topic data:

  • States most active in Thanksgiving cooking discussions: Texas, California, Florida, Georgia and New York
  • State with the most men talking about Thanksgiving cooking: California
  • Most popular topics: Turkey, easy, dinner, recipe, table (as compared to dinner, dessert, turkey, family, and cocktails in 2015)
  • Images were the most popular media type for posts about recipes and decor (as compared to video for posts about cocktails in 2015)
  • Most popular links were related to recipes and activities

Our Favorite Spring-Inspired Passover & Easter Recipes

At The Motherhood, quite a few of us have a passion for cooking, trying new recipes and coming up with some of our own. When a holiday approaches, we’re all quick to share and exchange recipes we love. With that in mind, we’ve rounded up some of our favorite spring-inspired dishes (and a dessert!) to share with you.

Italian Easter Pie

Italian Catholics make it a tradition to enjoy this savory pie to mark the end of the Lenten season. The week of Easter, Brittney visits her local Italian market to pick up some basket cheese (the name comes from the basket in which it’s formed). Some years she makes the crust from scratch, while other years she goes the pre-made route, but this dish is always on her family’s table!

Italian Easter Pie Recipe

Approx. 10-12 servings

INGREDIENTS:

For the Pie Dough:

2½ cups all-purpose flour

2 tablespoons granulated sugar

1 teaspoon salt

13 tablespoons unsalted butter, cold, cut into ¼-inch cubes

7 tablespoons vegetable shortening, cold, cut into pieces

4 to 5 tablespoons ice water

For the Pie Filling:

8 ounces sweet Italian sausage

1 small sweet onion, finely chopped

4 ounces pepperoni, chopped

4 ounces hard salami, chopped

4 ounces prosciutto, chopped

1 pound fresh basket cheese, drained and cut into bite-size pieces

1 pound ricotta cheese, drained

4 ounces mozzarella cheese, shredded (about 1 cup)

4 ounces provolone cheese, shredded (about 1 cup)

¼ cup grated Parmesan cheese

3 eggs, lightly beaten with a fork

Freshly grated black pepper

For the Egg Wash:

1 egg yolk

1 tablespoon heavy cream

Springtime Asparagus & Mushroom Lemon-Parmesan Pasta

Brittnee’s husband’s family has a strong Italian heritage, so he’s never been one to get overly excited about her family’s traditional Easter spread of ham, potatoes and various side dishes. So, when it was their turn to host Easter, she asked him what would get him excited about dinner and his (not surprising response) was, “Pasta!” This light, spring-inspired pasta dish was born from that request.

Springtime Asparagus & Mushroom Lemon-Parmesan Pasta Recipe

Approx. 6-8 servings

INGREDIENTS:

Olive Oil

1 pound fresh asparagus

16 ounce fresh mushrooms

Salt, pepper, garlic salt

1.5 pounds spaghetti noodles

2 lemons (both juice and zest)

1 large orange (both juice and zest)

1 cup grated parmesan cheese

Asiago or preferred cheese to shave over top of pasta

DIRECTIONS:

  1. Put water on to boil 1.5 lb spaghetti noodles. Add salt generously to water and cut half of your lemon (juice it and set aside for later), and toss lemon into boiling water to flavor water.
  2. Clean and cut (into bite size pieces) asparagus and mushrooms. Heat splash of olive oil in large pan. Toss asparagus and mushrooms in pan, seasoning with salt, pepper and garlic salt, to taste. Sauté until cooked to your preferred doneness. Set aside.
  3. Put noodles on to boil; cook until al dente.
  4. Juice and zest the rest of your lemons into a bowl (using the juice you set aside earlier, as well), in addition to your large orange.  Add olive oil (approx. ½ cup), as well as salt, pepper and garlic salt, to taste.
  5. Drain pasta, and add cooked veggies, citrus and olive oil mix you previously made and grated parmesan cheese. Toss until noodles are coated. Add additional olive oil as needed.
  6. Season with additional salt, pepper and garlic salt, to taste. Shave Asiago (or cheese of choice) over top of pasta dish and serve warm.

 

Cuban Chicken Soup with Matzoh Balls

Erin’s family is not Jewish; however, a number of her close friends from college are, and she learned a bit about the holidays and culture from them. During her senior year in college, a group of both Jewish and non-Jewish friends combined efforts to cook traditional dishes and host a Seder dinner for Passover, including one of her favorites, matzoh ball soup. This recipe is an interesting twist on the standard matzoh ball soup.

Cuban Chicken Soup with Matzoh Balls Recipe

Approx. 8-10 servings

INGREDIENTS:

For the matzoh balls

1 cup of matzoh meal

½ cup club soda

4 eggs with yolks

⅓ cup vegetable oil

1 teaspoon of salt

dash of pepper

dash of nutmeg

For the soup:

2 tablespoons extra virgin olive oil

15 whole allspice berry

3 bay leaves

1 medium onion, finely chopped

2 carrots, peeled and diced

2 ½ pounds boneless skinless chicken breasts (or thighs)

4 cloves of garlic, finely minced

2 medium malangas*, peeled and coarsely diced

2 quarts of low sodium chicken broth

1 teaspoon of bijol powder (optional)*

6 culantro leaves*

½ Kabocha squash, peeled and coarsely diced

Kosher salt and Freshly ground black pepper

4 baby bok choy, cut into quarters, lengthwise

2 zucchinis, sliced into ½” slices

1 lime, sliced

Easter Egg Cookie Dough Truffles

Serena was looking for a cute, spring-themed dessert recipe for her family’s Easter brunch that both the kids and adults would enjoy. She’s been intimidated by chocolate-dipped recipes before, but as Lisa of Wine and Glue said, these truffles “stay together perfectly, and they dip beautifully.”

INGREDIENTS:

1/2 cup of butter, softened

3/4 cups packed brown sugar

2 cups all purpose flour

2 teaspoons vanilla extract

14 ounces sweetened condensed milk

1 cup mini chocolate chips

pink, blue, purple, and white candy melts

DIRECTIONS:
